Lemonade Icebox Pie

So my mom first made this for me last summer and then I made it for my husband in 3 different flavors when he came home from his deployment. It is so refreshing and delicious and sooo easy! It's a great summery dessert and a great dish to bring to parties! 

It's essentially ice cream, cool whip and lemonade mixed together and frozen in a pie crust. I have tried it with lemonade, raspberry lemonade, pink lemonade, limeade, and orange juice. The limeade was not very good at all and the orange juice was decent but needed some work. So I'd recommend sticking with lemonade variations. :)

Lemonade Icebox Pie

1 Pint of vanilla icecream (about half of a 1.5 qt tub)
1 can frozen lemonade (or pink lemonade or strawberry lemonade)
1.5 tubs cool whip
Graham cracker pie crust

Pour the frozen lemonade into a bowl and blend. Add ice cream small amounts at a time and blend. Spoon in a full tub of cool whip and blend until smooth. Pour into the graham cracker pie crust (I had a little bit left over which I poured into a small bowl and threw in the freezer to eat just on its own for dessert). Put crust into freezer for at least 4 hours, then gently frost about half a tub of cool whip onto the top of the pie (optional). A previous time I made this, I didn't do the cool whip topping and just served each slice with a dollop of it instead. Either works fine. :)

Easy Lemon Cake Cookies

I found this recipe collection of lemon baked goods in a magazine which are really easy and generally start with a boxed mix - which I love. Not a huge fan of the time it takes for completely homemade food. I decided to start with the first one! Easy Lemon cookies using lemon cake mix, vegetable oil, eggs, lemon juice and powdered sugar. Easy and yummy! :)

Here's the recipe:

1 Pkg Lemon Cake mix
2 eggs
1/3 cup vegetable oil
1 tsp lemon juice (original recipe calls for lemon extract, I didn't have any and it worked fine!)
Confectioners sugar (powdered sugar)

Preheat oven to 375 degrees.

Mix the cake mix, eggs, vegetable oil and lemon juice together. Fill a small bowl with powdered sugar (you don't need a lot). Roll the dough into small balls and then roll in in powdered sugar until covered. Place the sugar coated dough balls on an un-greased cookie sheet (I used a non-stick cookie sheet and they still stuck a little bit).  Bake 6-7 minutes. (At 6 minutes they looked great but were a little doughy inside and I left them an extra two minutes which may have been a minute too long.
But they were pretty good! Soft and cakey with a light lemony flavor. I kind of wish they had a gooey cream filling kind of inside or like a glaze on top. Maybe next batch - I have a TON of dough left. (the original recipe says if you do teaspoon size balls, you'll have enough for 8 dozen cookies).
